We make these with pure powdered monk fruit and stevia sweetened Lilly's Dark Chocolate Chips - even if you're not sugar free, this way of doing it means guilt free breakfast cookies!!! Packed with almond goodness, fiber, healthy fats and phytonutrients from the chocolate, 2 of these will put a smile on your face in the morning better than any protein bar or cereal and with no sugar crash.

  • 2 1/2 cups blanched almond flour
  • 1/2 cup grass fed butter
  • 1 large Egg
  • 1 teaspoon pure monk fruit extract
  • 1 Tablespoon vanilla
  • 1 Tablespoon Blackstrap molasses <negligible carbs, packed with nutrition and flavor
  • 2 Tablespoons psyllium husks
  • 1/2 cup Lilly's Dark Chocolate Chips
  • 1/2 cup organic walnuts

Cream the stick of softened butter with the little bit of monk fruit extract - use your stand or hand mixer. Sprinkle in the almond flour 1/2 cup at a time - do it slowly, not all at once, or it will be too dry. Add the egg, vanilla, molasses, psyllium and mix thoroughly. Add chocolate chips and walnuts, incorporate.

Make 2 Tablespoon round balls and flatten with a buttered large glass or spatula - they won't spread. Bake for 12 minutes at 350 and pour yourself a glass of unsweetened almond milk - soooo good together!
